Mississippi Chuck Roast Recipe
This lightning-fast and simple crockpot meal is perfect when you are short on time, but still want delicious food. And if you’re a fan of leftovers - this one is definitely for you! It reheats easily, and is one of those dishes that seems to become even more flavorful the next day.
3 lb beef chuck roast OR 3 lbs boneless/skinless chicken breasts or thighs
1 stick of butter, cut into 4 pieces
½ jar of pepperoncini with the juice (this can be adapted to how spicy everyone likes it)
1 packet au jus mix OR brown gravy mix
1 packet Ranch seasoning mix
Place beef or chicken in the bottom of the slow cooker. Add all the other ingredients, no need to stir. Cook on low for about 8 hours. You can flip the meat over about ½ way through if you are home, but it's not necessary. Shred and serve.
Make it a meal: serve the shredded meat on buns with cheese or over rice, mashed potatoes, or pasta with roasted veggies.
