Cameron’s Christmas Chili

“Christmas” Chili (serves 4)

This chili got its name when Cameron accidentally bought a can of tomatoes and green chilies for a white chicken chili instead of plain canned chilies. 

1 lb boneless skinless chicken breasts or thighs
2 TB oil
2 garlic cloves, minced
1 onion, diced
1 14 oz can tomatoes with green chilies
2 cans rinsed and drained white beans (great northern or cannellini)
1.5 cups chicken or vegetable broth
¼ c sour cream
2 tsp cumin
2 tsp oregano
1 tsp coriander (optional)
Dash cayenne pepper
Salt and pepper to taste

Turn your pressure cooker to saute, let warm up, then add oil, garlic, and onions. Sweat for ~5 minutes, add the spices and cook for 30-60 seconds, until fragrant. Add in cans of tomatoes and chilis and the beans. DO NOT STIR. Place chicken on top, pour broth over top and pressure cook for 10-11 minutes. Let the pressure cooker naturally release. 

Take chicken out, shred, return to the pot, and stir in sour cream with the heat off.
